This unique sparkling wine is crafted from the nearly extinct Jampal grape, making it a one-of-a-kind product. With a limited and meticulous production process, this wine is created using the traditional method, resulting in a delicate and fine bubble. Notes of fruit and brioche, along with a refreshing acidity, add to its versatility and make it the perfect choice for any occasion. Expertly crafted by winemaker Ricardo Noronha, this wine is grown in clay-limestone soil and benefits from a temperate Mediterranean climate with a hint of Atlantic influence. The grapes are carefully harvested and pressed in a pneumatic press, collecting the noblest portion of the must for fermentation at a controlled temperature. After aging "sur lie" for 24 months, the wine undergoes a second fermentation in the bottle, resulting in deep fruity and citrus notes. The palate is balanced and elegant with a firm acidity that adds a fresh touch. This wine pairs well with a variety of dishes such as suckling pig
