Chosen hand-selected grapes rom older vines of 30 years plus, with a strict selection process. Let them macerate for 10-14 days and age for 18 months in barrels. The result is an intense, dark red wine. The nose is full of ripe, dark fruit aromas (blackberry, plum, cassis, wild currants) with notes of vanilla, toasty oak, sweet spices, leather, tobacco, cocoa, and pencil shavings. On the palate, enjoy layers of bitter chocolate, liquorice, roasted meat, and torrefaction, all supported by firm, fine-grained tannins and a long finish. This complex wine is surprisingly smooth, perfect for pairing with red meats, spicy dishes, Cantonese BBQ pork, stews, and hearty vegetable dishes. For the best aromatic experience, decant for 2 hours before serving.
